Learn how to make authentic Korean bulgogi with simple ingredients, easy steps, and helpful substitutions for home cooking.

How to Cook Korean Bulgogi (불고기)

Bulgogi is one of the most popular Korean dishes. It features thinly sliced beef marinated in a savory-sweet sauce and quickly grilled or pan-fried. As a result, the meat turns out tender, juicy, and full of flavor.

Ingredients

The recipe for bulgogi can be changed fluidly.
  • 500g (1 lb) thinly sliced beef ribeye or sirloin
  • 1 medium onion, thinly sliced
  • 3 green onions, chopped
  • 2 carrots, julienned (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil1 tablespoon sugar or honey
  • 2 cloves garlic, minced
  • 1 tablespoon grated pear or apple (substitute: applesauce)
  • 1 tablespoon rice wine (substitute: dry sherry or white wine)
  • 1 teaspoon sesame seeds
  • A pinch of black pepper

Instructions

Bulgogi is delicious when you eat it with chopsticks!
  1. Prepare the beef. First, place the meat in the freezer for about 30 minutes. This step makes slicing easier and helps achieve thin, even cuts.
  2. Make the marinade. Next, mix soy sauce, sesame oil, sugar, garlic, pear (or applesauce), and rice wine in a bowl. Stir well until the sugar dissolves.
  3. Combine with beef. Then, add the beef and vegetables to the marinade. Coat evenly and refrigerate for at least 30 minutes. For deeper flavor, marinate overnight.
  4. Cook the bulgogi. After that, heat a skillet or grill pan over medium-high heat. Add the marinated beef and stir-fry until the meat is browned and cooked through.
  5. Serve and enjoy. Finally, garnish with sesame seeds and green onions. Bulgogi pairs well with steamed rice and fresh lettuce wraps.

Tips and Substitutions

  • If Korean pear is not available, applesauce works well.
  • Instead of rice wine, use dry sherry or white wine.
  • For vegetarians, replace beef with mushrooms or tofu.
